This Christmas drink recipe has been in my family for at least 100 years, I think. If you make it, have a fire extinguisher handy :) Enjoy !!

Blanche 1 cup almonds
Empty into large saucepot:
     -- 1 bottle Claret (fifth)
     -- 1 bottle Port (750 ml)
     -- 1/2 bottle Cognac or Brandy

Add almonds and:
     -- 6 2-1/2-inch cinnamon sticks
     -- 1 cup dark raisins
     -- 6 pieces candied orange or lemon peel
     -- 12 whole cloves
     -- 12 cardamon seeds (peeled)

Bring slowly to boiling
Reduce heat
Simmer 10 minutes
Remove from heat

Put into sieve:
     -- 1 cup cubed sugar

Place sieve over saucepan
Using ladle, pour some of mixture from saucepan over sugar
Ignite sugar with match (Keep a lid handy! 2 people should be on hand)

Continue to pour liquid over sugar until sugar has completely dissolved. Liquid will be flaming.
If necessary, extinguish flame by placing lid over saucepan.
Only leave flaming until dissolves -- you don't have to burn off all the alcohol

Serve hot in mugs or punch glasses.
Be sure there are some raisins and almonds in each portion

May be prepared days in advance and stored in bottles.
When ready to serve, heat thoroughly but do not boil.

does it have to be claret?

Any dry red will do. We use Cabernet Sauvignon, a common, popular red wine in California.

It sounds fun, but in my profession, I have to be quite afraid of alcohol, so I would burn it all off, only I'd probably never make it, because I'd be afraid I wouldn't get it all.
